Aquamar Kitchen: Unique Avocado Toast Recipe

A soon-to-be favorite dish, this unique avocado toast recipe is packed with flavor and richness that’s balanced with spice from the shrimp topping and zesty fresh citrus from the lime juice. We have so many exciting new creations to share with you, and this unique avocado toast is certainly one of my favorite new Aquamar Kitchen dishes that you can enjoy during breakfast and lunch, with none of the guilt. OCEANIA SIGNATURE AVOCADO TOAST RECIPE
SERVES 5

INGREDIENTS

TOAST & SHRIMP

  • 5 slices rustic seed bread, about 5 inches long and ½ inch thick
  • 15 pieces raw shrimp, peeled and with tail on
  • 2 tablespoons olive oil or Italian-blend canola oil
  • 1 teaspoon taco seasoning
  • Salt, to taste

AVOCADO MIX

  • 2.5 cups Hass avocados, ripe, lightly mashed with fork
  • 2 limes for fresh lime juice
  • Fleur de Sel, to taste

GARNISH

  • 2 limes, cut into 3 slices each

DIRECTIONS

  1. Mash the avocado with the lime juice and fleur de sel, keeping the avocado pieces chunky.
  2. Toast the bread on both sides. Top each slice with 4 ¼ tablespoons of avocado mix; do not flatten.
  3. Pan fry the shrimp in olive oil and season with salt. Add the taco seasoning and cook until done.
  4. Place 3 pieces of shrimp on each piece of toast, adding a bit of the oil from the shrimp.
  5. Garnish with a slice of lime.
  6. Serve toast with the shrimp warm.

Born in Fontainebleau, France, Alexis Quaretti began showing a particular interest in cooking from an early age when cooking with his grandmother. At the age of 16, he had developed his passion for food to such a level that he knew he had found his vocation. After working at several renowned Michelin-starred restaurants, Alexis joined the Oceania Cruises team in 2004, and he was later promoted to Executive Chef. After more than a decade at Oceania Cruises, he spread his culinary wings and took a leadership role at another cruise line. In 2022, Alexis returned to the Oceania Cruises family as Director of Culinary Programs & Development. In his new and expanded role, he oversees all aspects of culinary operations across the brand’s seven acclaimed ships and 12 restaurants and dining venues, including the development, introduction and implementation of new concepts to continually elevate the most awarded dining experiences at sea.
